Dinner Last Night

It makes it a lot easier to survive a work day with the knowledge that you will be enjoying a delicious dinner afterwards. Yesterday was one of those days.

I’ve taken on the task of grocery shopping every week with my mom gone during the week. I don’t mind it and find it to be fun and adventurous (my nana thinks otherwise). I shop for 2-3 people with an $80 budget, and every week I write a list. I ask what people want in the house, and I plan dinners for the week. This week I included Dad’s favorite and a LeMay family staple: Spaghetti & Meatballs.

It was great coming home from a 12 hour day in town working and going to the gym and eating a heaping plate full of ultimate comfort food. I lightened the meal with a refreshing and light salad. Our stomachs were extremely satisfied (that’s an understatement).

Spaghetti & Meatballs

Ingredients:

  • Box of favorite pasta
  • Jar of favorite pasta sauce
  • 1.5 lbs of ground beef
  • 4 cloves of garlic (finely chopped)
  • 1/2 onion (finely chopped)
  • 1 egg
  • 1/3 c. breadcrumbs (plain or Italian style)
  • Freshly ground pepper
  • 1/2 tsp. salt

Cook the pasta until it’s Al dente *Don’t forget to salt the water*

Combine all the ingredients for the meatballs and shape into small balls. Cook them in a frying pain until they are medium well.

Heat up the sauce with the meatballs in it.

Garnish with freshly grated parm or a sprig of basil.

Emma’s Summer Salad

Beet-Arugula-Salad

Ingredients:

  • 1 Package of baby arugula
  • 2 Nectarines or peaches
  • 10 Cherries
  • 1 Small package of goat cheese
  • Citrus vinaigrette
  • Freshly ground pepper
  • 1/4 c. pecans or walnuts (optional)

This is a delicious summer salad. The fruit perfectly compliments the arugula and cheese, creating fresh & tangy bites. Cut the fruit into small chunks and crumble the goat cheese on top. Pick a vinaigrette that doesn’t have a lot of sugar– you don’t need it with the fruit! Make this salad your go-to for these hot months!
